Ingredients for Mishti Doi:-

1/2 cup - Sugar

1.5 liter  - Milk

3/4 cup- sugar

3 tbsp - Water

1.5 cup- Hung Curd

A clay pot of any size ( optional)

Foil sheet

How to make Mishti doi-

Place a heavy-bottom pan on low medium flame and pour 1/2 cup of sugar and 3 tbsp water. Keep stirring until the mixture comes to a boil. Cook till the sugar caramelizes and turns brown.

Then add 1/2 cup of milk to the same pan and keep mixing until there are no lumps and the mixture comes to a boil.

Now, add 2 liters of milk to the pan and boil. Mix the contents of the pan well and let it cook for 20 minutes. Cook till the milk reduces to a quarter. After that, add 3/4 cup of sugar, keep stirring for 10 minutes.

In a mixing bowl take 1.5 cups of hung curd and whisk it and now add thickened milk. The milk should only be slightly warm. Mix everything well.

Transfer the mixture to a clay pot or any other container and cover it with a foil sheet.

Now transfer your pot to a warm place in the house. This will help your Mishti Doi to set well. Keep the pot undisturbed overnight.

In the morning, your Misgti Doi would have set. Transfer it to the refrigerator to cool. Once cooled your chilled Mishti doi is ready to serve.

Garnish it with pistachios, almonds and kesar.
